Snacks : Hara Bhara Kabab

After getting home a bunch of spinach, I wondered how can I feed this to my kids.  As I almost zeroed  in no-effort-after-school-snack  ( Oats & Milk),  I decided will do this, and surprise the kid.  It took me 45 minutes, from start to finish. Boy, it was filling and delicious!

Easiest way to do this is  to boil potato and peas when you cook in the morning. The rest will get done in 15-20 minutes.

Baking : Oatmeal Cookies

What goes well with Soup?  Something nice, hearty and home made!  So, for kids after snack lunch I made Oatmeal cookies, along with Brocolli and Peas soup.

I picked this one up from here,  my most trusted source for veg recipes on Internet.  It took me 30 minutes from start to finish – 15 minutes to pre-heat and 15 minutes in the Oven.

After 10 minutes, I tossed them upside down – because I didnt want a burnt bottom for cookie. The top portion was slightly browned, but it evened out. Looked good, tasted  good.

Verdict – 9/10.  I wish to get more presentable cookies!

Snacks : Whole Wheat Carrot Muffins

It was monday and I was full of energy. We had a good weekend and I was all done with my afternoon routine. So, me and vihu were waiting for the elder sister – bored. I had two options – force the kid to sleep or make her afternoon interesting by baking with her.  Why I say Interesting, because she does the major part of mixing for me.  Sits cross legged in kitchen and keeps commanding why the flours are coming so late to her mixing bowl. I just love the excitement she has in her eyes when she peeps through the oven door and says – “Mummy, look cup cakes are growing!”. So, I went for the fun option and baked whole wheat carrot cupcakes for the kids. Entire process end to end took me 45 minutes.

Verdict – 5/5 ,  kids ate it up in 10 mins flat.

Didn’t do the cheese frosting because  I was too lazy for that – still they turned out super duper awesome.

Snacks : Jonna Jantikalu

I always want ways to incorporate millets into our home. Usually not successful, this recipe utilized the 1 kg of jowar powder we had at home. The taste is awesome and you can never tell that these are made from jowar.

I picked this up from Eenadu paper. Here goes the recipe:

Jowar powder / Jonna pindi : 4 cups
Ghee – 1 tsp
Salt – as per taste
Cumin seeds – 1/2 tsp
sesame seeds – 1 tsp
Green chilli paste – 2 tsp
Ginger Garlic paste – 1/4 tsp
Oma – 1/4 tsp

Procedure:
Take all the ingredients and mix well. Using warm water, knead the ingredients to hard dough. Use Jantikala gottam to get these tasty jantikalu.
